Apollinaris is an officially recognised "natural mineral water". To be recognised as such, it must fulfil the strict provisions of Germany's Mineral and Table Water Ordinance. It must originate from an underground water source that is protected from impurities, and must be essentially pure. It must be bottled directly at the source and may only be served in a restaurant with the original bottle.
The label must contain an excerpt of an analysis showing the characteristic components of the specific mineral water. The name and location of the spring must also be given.
Natural mineral water continues to be regularly inspected even after it has received official recognition, since its composition, temperature and other significant characteristics must remain constant within specific natural fluctuations.
